CURRIED TURKEY MEATBALLS

Curried Turkey Meatballs is a nutritious and healthy recipe recommended by Personal Trainer & Nutrition Coach Matt Hartsky.
Meatballs:
- 2 pound ground turkey
- 1/4 cup fine chopped onion
- 1/2 cup riced cauliflower (or any rices vegetable)
- 2 eggs
- 1/2 tsp minced ginger
- 1 tsp low sodium soy sauce
- 1tsp honey
- Ground pepper to taste
Combine all ingredients. Using a small scoop or spoon, place meatballs onto a foil lined large baking sheet with sides. Cook in 400 oven for 10 minutes. Turn oven to broil cook for an additional 5 minutes.
Sauce:
- 1 medium onion chopped
- 1 can (15 oz) diced tomatoes
- 1 can (15 oz) unsweetened coconut milk
- 2 teaspoons curry powder
- 3 cups fresh spinach, chopped
In large frying pan, sauté onion until soft (about 5 minutes). Add the rest of the ingredients but spinach. Cook until thickened. Add Spinach. Cook until spinach is to your preference.Add cooked meatballs to sauce. Simmer 5-10 minutes. Enjoy over zucchini spirals, rice , quinoa or by themselves.
