CHILI GLAZED SALMON

Chili Glazed Salmon with Mexican Cauliflower Rice is a nutritious and healthy recipe recommended by Personal Trainer & Nutrition Coach Matt Hartsky.
Begin with:
- 4 (4 ounce) Skin on salmon fillets
- 1 Tablespoon olive oil
Glaze, mix together:
- 2 Tablespoons honey
- 1 Tablespoon Sriracha
- 1 Teaspoon lime juice
- Preheat oven to 400 degrees.
- Heat oil in ovenproof skillet, on medium heat.
- Add salmon. Sear 2 minutes, flip and sear second side.
- Brush salmon with glaze.
- Transfer the salmon in skillet to oven.
- Cook 6-8 minutes until done.
- (Sear skin side first, flip. Skin peels right off)
Cauliflower Mexican Rice:
- 1 Tablespoon olive oil
- 1/2 Cup chopped onion
- 1 Clove minced garlic
- 1 Teaspoon each ground cumin & chili powder
- 2 Cups riced cauliflower
- 1 Cup diced fresh tomatoes
- 1/4 cup chopped fresh cilantro
- In large skillet, cook onion and garlic in oil 3 minutes.
- Add cumin and chili powder, cook another 3 minutes.
- Add riced cauliflower and tomatoes.
- Sauté 5-7 minutes until cauliflower is soft.
- Stir in cilantro.
