Transforming Strength Balsamic Chicken Recipe

Balsamic Chicken with Honey Roasted Tomatoes is a nutritious and healthy recipe recommended by Personal Trainer & Nutrition Coach Matt Hartsky.

For the Chicken:

  • 2 Chicken thighs, bone in with skin
  • 1 Cup mushrooms, chopped
  • 1/2 Medium onion, chopped
  • 3 Tablespoons balsamic vinegar 
  • 1 Tablespoon olive oil
  • Sea salt and pepper

For the Tomatoes:

  • 1 Pint grape tomatoes
  • 1 1/2 Tablespoons honey
  • 2 Tablespoons olive oil
  • Sea salt and pepper


  • Preheat oven to 375. Toss the tomatoes with olive oil, honey, salt and pepper. Place on a baking sheet and roast for about 20 minutes, or until squishy.
  • Meanwhile, for the chicken), heat the olive oil in large saucepan over medium heat. Add onions and mushrooms. Cook until fragrant, about 2-3 minutes. Place chicken thighs in the pan with mushrooms and onion, add balsamic vinegar, salt and pepper to taste. Reduce heat, cover with a lid, simmer for 15 minutes.
  • Placed chicken, mushrooms and onions over cooked tomatoes and broil for 5 minutes. (This made the chicken skin crispy!) 

I tripled the chicken thigh number and doubled the the rest of the recipe. It turned out very yummy!
